I know it's winter and that some people have minus 20 degrees, brrr and here we are serving cold as ice smoothie - but how many teas and coffees can one drink? Here weather changes everyday, we had spring yesterday, bit more chilly again today, with really cold wind. But something tells me that spring will arrive to Dublin pretty soon. And this smoothie is in true spring colour – green, with fresh mint flavour and all the fruits you will find in your local grocery at any time of the year.
Yesterday we were at the sauna, gym and swimming pool and after our training we made this yummy delishness, it is really refreshing and gives you so much needed (right now) kick of energy. The recipe comes from the latest book by Donna Hay "Fresh and light", just we added kiwis to it. As Donna said this is not a book about diet, but rather an attempt to find a balance in your daily eating routines. We recommend it to everyone!
Mint, kiwi and pineapple smoothie
For 2, 3 glasses:
- 300ml reduced-fat-milk
- 140g reduced-fat-plain yoghurt
- 3 kiwis
- 200g chopped pineapple
- 2 tbs honey
- 6 ice cubes
- 2 tbs fresh mint
Peel kiwis. Place all the ingredients in a blender and blend until smooth.
