Often ask myself am I  the only person in the world who does not like chocolate? But give me white chocolate and it will be gone within minutes. Apparently in Usa, there is a  variation of brownies  that is made with brown sugar and no chocolate and it  is called a blondie, i loved the name but wasn't sure if I could name mine blondies so in the end they are white chocolate brownies. They taste amazing on their own or with vanilla ice cream. They smell great, white chocolate tastes so good, and of course raspberries add to the magic too. If you don't like white chocolate you can make them  with mix of dark and milk ones.

for 6 portions:

  • 300g white chocolate
  • 250g butter or margarine
  • 50g sugar
  • 4 large eggs
  • 180g plain flour
  • 2 tsp baking powder
  • 200g raspberries

Heat oven to 180°C. Break chocolate into chunks. Put chocolate, butter and sugar in a bowl, place bowl on top of pot with boiling water and gently melt all the ingredients, stirring with wooden spoon. Remove from the heat.

Separate egg yolks from egg whites. Add egg yolks one by one to the melted chocolate mixture. Sieve over the flour mixed with baking powder, mix all well. Beat egg whites until stiff and add at the end gently stir with wooden spoon.

Baking tin (20x20cm) cover with baking paper, grease well with butter and sprinkle bread crumbs on top of it. Scrape into the tray, scatter over raspberries for 40 minutes. Cool before slicing.
