I came across this recipe while netsurfing, on one of those sunny days and the photographs were simply beautiful and haunting. I added few of my own ingredients: mascarpone cheese (which adds nice flavour to it) and honey. I loved the idea of roasting the peaches too, it gave them this natural sweetness, nice flavour and texture. And since I got the popsicle forms some time ago, I am always on the lookout for new popsicle recipes - call me a popsicle maniac, I don't mind! The art of making your own popsicles is that you have complete control over the ingredients - you know exactly what goes in these forms. for 5-6 popsicles:
- 2 peaches
- tsp lemon juice
- 250 ml Coconut Milk (light or full fat)
- 100g mascarpone cheese
- 2 tsp Vanilla Extract
- 4 tsb honey
- pack vanilla sugar
- pinch of sea salt
Preheat oven to 220°C degrees. Cut peaches into fours, sprinkle with lemon juice and a touch of sea salt . Place in the oven and roast for about 25 minutes. Remove from oven and dice into smaller pieces.
Whisk together mascarpone, coconut milk, vanilla sugar, honey and vanilla extract. Pour into the popsicle molds, filling them half way. Stick in the freezer and allow to set for 30 minutes.
Remove molds and place pieces of peaches in them. Try to evenly distribute the peaches into the popsicles. They should be full of peaches. Top off the popsicles with the remaining coconut vanilla cream. Stick a popsicle stick in each and freeze for another few hours/overnight. Once frozen remove from the molds. If you dip the outside mould into warm tap water for 10-15 seconds, this allows them to be removed much easier.
