I have never made soufflé before, and I always wanted to make one, I have to admit that all of them look so good in every cookbook. And apart from that it is strawberries season, so I decided to combine these two and check out this recipe for light summer dessert. You actually only need eggs and strawberries, that's how simple it is. I was happy enough with the results - it looked very soufflé and very strawberry, it was light and low-calorie (well depends how many spoons of sugar you will add there). As well I used some almond sugar cause it nicely enhances taste of strawberries.
For 3 soufflés:
- 1 cup strawberries
- 1,5 tbs sugar
- 1/2 tsp almond sugar (or vanilla one)
- 3 egg whites
Clean, hull and purée strawberries. Mix strawberry purée with sugar and almond sugar. Beat egg whites until soft peaks form. Fold in strawberry mixture very gently, until well incorporated. Bake in 2,3 greased ramekins at 200°C for about 12-15 minutes until puffed and golden brown on top. Serve immediately.

Hi, Thanks but to be honest with you I filled the forms very full so they didn't have to rise as much. As well when you take it out of the oven it is the best to consume them immediately as they tend to fall down quite quickly. It is different kind of souffle, just consisting of beaten egg whites, from what I could see all other recipes are more complex and I am still on my way to make classic cheese soufflet too! Greetings
