Do you have such ingredient in your kitchen that you just can't live without? For us it would be straight after olive oil - soy sauce. I admit I am soy sauce addict, I add it everywhere: with boiled egg, tofu, salad or soup - it just enhances the flavours of any dish so amazingly. To say that we couldn't cook without it, would probably be an exaggeration, but it is very close to real life scenario.
I know there are a million recipes out there for chicken. But as always we like simplicity, less complication and more taste. Here one main ingredient - soy sauce itself - brings the dish to the next level. This recipe comes from my mum, it is one of the easiest and one of the most popular among my family. for 3 portions:
- 3 chicken breasts
- 3 cloves garlic
- 1/2 cup soy sauce
- 5 tsp olive oil
- 1/2 tsp brown sugar
- few leaves of thyme
- 300g potatoes
- 200g green beans
- 2 tbs milk
- salt, pepper, pinch of nutmeg
- few leaves of parsley
Peel and dice garlic. In a large bowl combine the garlic, olive oil, sugar and soy sauce, add thyme leaves and some pepper. Add the chicken and turn to coat well. Cover and marinate for one hour. Place the chicken with marinade on a heat, boil the chicken first for approximately 15 minutes, discard of the marinate and than fry the chicken for a short while 1-2 minutes on each side. Boil potatoes for 20 minutes and mash them along with milk, nutmeg, salt and pepper. Cook the green beans in a large pot of boiling salted water until just crisp-tender, about 5 minutes, they'll turn a bright green colour after this blanching process. Place beans in a serving dish, on top serve your chicken, decorate with freshly ground black pepper and fresh thyme leaves, delicious with mashed potatoes garnished with parsley. Enjoy!
