We read somewhere that its history dates back to 1889, it was a symbol of the unification of Italy and its basic three colour version - mozzarella, basil and tomatoes - was made in the colours of the Italian flag - . Probably the simplest pizza in the world. We only have to buy only yeast - we used in this recipe fresh ones - better "rise" - the dough rises quickly and is much more fluffy. The secret is well-seasoned tomato sauce - garlic, which gives a wonderful flavor and fresh herbs - oregano and basil which give beautiful aroma

for 12 servings:

  • 650 g flour
  • 2 tbs olive oil
  • 400 ml lukewarm water
  • 25 g yeast
  • salt, pepper, pinch of sugar
  • 30 small cherry or wine tomatoes
  • can chopped tomatoes (425g)
  • 4 tbs tomato paste
  • 12 slices cheese
  • 2 cloves garlic
  • fresh oregano and basil

In a pot with lukewarm water, add yeast, sugar and some flour and leave aside for a moment until the yeast will begin to raise. Meanwhile sift the flour into a bowl, pour the yeast and knead to smooth dough, if necessary add some more flour so the dough has a nice, solid consistency, and can be easily rolled out after. Cover the dough with with a linen cloth, put aside in a warm place for about 15-20 minutes.

Meanwhile, fry the pressed garlic, add can of tomatoes and tomatoe paste, season with oregano and chopped basil. Knead yeast dough and roll out on pastry board, sprinkled with flour. Fit baking paper on a baking pan, spread some olive oil on top of it. Place dough on the pan, leave for another 15 minutes in a warm place to rise. After this time, cover with some olive oil, and after with tomato sauce, put in the oven for 20 minutes. Two minutes before the end of baking time arrange on top of pizza cheese and cherry tomatoes cut in half. Season with salt and pepper. Once baked decorate with basil leaves.
