We use carrots quite often in our kitchen. Lately it was a carrot cake and today we wanted to prepare some nice soup for a starter so we came up with Orange and carrot coup. Oranges add a nice fruity flavour to carrots and preparation time takes just 20 minutes.
- 600 ml chicken or vegetable broth
- 500g carrots
- 1 large onion
- 300 ml fresh orange juice
- 2 tbs orange peel
- 4 tbs fresh cream of 12%
- salt, pepper, sliced cooked carrots, orange and thyme for decoration
Heat the broth. Dice the onion and fry it on a pan. Peeled carrots, sage, orange peel and spices, add all to the broth. Reduce heat, cover and simmer for 10-15 minutes, until vegetables are tender. Transfer the soup to a blender - add 2 tbs cream, orange juice and blend everything until smooth. Garnish with carrot, thyme, orange slices, cream and freshly grounded black pepper.
