What we could take for a picnic? Gazpacho! We figured out we could make it in advance and than take it in vacuum flask. This soup does not require cooking and is served cold, perfect for hot summer days. We fell in love with this beautiful red colour and decided to skip the rest of the extras and prepare a basic version of this delicious soup. Remember to use real spanish olive oil.
for 2 cups:
- kg red, ripe tomatoes
- red pepper
- clove garlic
- 100 g onions
- 4 tbs white wine vinegar
- 3 tbs olive oil
- ts salt
- basil, parsley for decoration<
Wash the tomatoes carefully cut out the cores. Cut into quarters. Wash the peppers, cut into smaller pieces. Peel the garlic and onion, cut .
Place all vegetables into a large bowl and blend altogether until smooth. Finally, add the olive oil, white wine vinegar and salt and pepper to taste. Serve garnished with basil leaves and ice cubes.
