Krupnik is a good dish for every occasion, and probably one of the most famous and popular Polish soups. It can be prepared with meat or alternatively as a tasty vegetarian dish - just instead of meat, use more vegetables. It's simple and preparation time does not take long.
For 4-6 portions:
- 0.5 kg pork meat or poultry (with or without bones)
- 0.5 kg potatoes
- 3 carrots
- 3 parsley
- root parsley
- 250g barley
- 3l of water
- Maggi, tbsp salt, pepper
- 150ml 12% cream or plain yogurt
Meat, potatoes, parsley, celery, carrot and leek wash and place in a pot, fill with water, add salt. In a separate pot, cook barley in a salted water. I recommend barley bags with dried vegetables, will will add charm and flavor to our soup. When the vegetables are ready (after around 20 minutes), remove them and cut into cubes (We do not recommend cooking chopped vegetables from the start, because too soon they become overcooked). We leave the meat in the pot and let it cook on its own for another 20 minutes. After that we remove it, and separated meat from the bones and tear into smaller pieces. We place all the ingredients (meat, vegetables and barley) you can also add one glass of water left after boiling barley. Cook for another 10 minutes over low heat.
Place cream in a bowl, add ladle of soup and mix together thoroughly (with whisk). Pour into a pot of soup and stir. At the end add spices according to taste - salt, pepper and maggi and decorate with chopped parsley. Enjoy!
