This is one of the most popular traditional polish soups. It has a nice pleasantly sour taste and it's made from salted, sour cucumbers and potatoes. As to the cucumbers -  they are sour in taste, similar to kosher dills, but tend to be seasoned differently. We usually preserve them in wooden barrels. They are very low in calories and good for your health.

for 4 portions:

  • 0.5 l vegetable broth
  • 3-4 sour cucumbers
  • 4 potatoes
  • parsley
  • carrot
  • 2 bay leaves
  • 4 allspice
  • 1 tsp salt
  • 100ml fresh cream
  • salt pepper

Mix broth with 1 litre of cold water, add 1 tsp of salt, allspice, bay leaves and bring to quick boil. Wash and peel vegetables, dice potatoes and parsley, slice carrots and add to the boiling broth, cook on a medium heat for around 15 minutes. In the end add grated cucumbers. Mix few spoons of soup with cream, pour mixture back to the pot, stirring. Season with salt and pepper.
