Stunningly simple dish! We were craving these for weeks, bought them finally yesterday - beautiful and golden and they were delicious! I think we are one of the last few bloggers who haven't added this classic recipe yet, so here it is. Great idea for Saturday's breakfast in bed :)

I am dreaming now about another great recipe - piece of roasted meat with extravagant chanterelle mushroom sauce, mhmm. And you, how do you like yours? Do you have favourite chanterelle mushrooms recipe?

for 2 people:

  • 10 eggs
  • 300g chanterelle mushrooms
  • some butter
  • salt, pepper
  • some parsley

Wash and clean mushrooms, dry with paper towel. Cut bottom parts. We first "dry fry" them in a pan to allow water to cook off just for a while. Than place butter on a pan and fry for few minutes until they are golden (around 6-8 minutes). Season with salt and pepper.

Crack all eggs into a bowl. Add eggs to the frying pan and with wooden spoon stir around egg whites, until these are white and done, than quickly mix egg yolks and remove from the heat. Season to taste again with salt and pepper. Sprinkle with chopped parsley. Serve with bread.
