Beans contain many nutrients and proteins. This is an excellent cake not only for vegetarians and vegans. Light and yummie – a great alternative to meat dish:) It can be prepared with simple ingredients you can find in your kitchen. It can be easily frozen and reheated for a quick dinner.
- 80g white beans
- 4 garlic cloves
- 2 eggs
- 250g grated cheese
- 2 large onions
- 1 tbs oil
- 3 tbs breadcrumbs
- 5 tbs chopped parsley
- 1/2 chilli pepper
- 5 tbs breadcrumbs
- salt, pepper
- oil
Soak the beans, leave for the night. Next day, cook in the same water in which it was soaked. Thoroughly drain and grind in food processor. Peel onions and garlic, wash and chop. Fry it in a frying pan, add salt and pepper. Add eggs, garlic, browned onions, grated cheese and chopped parsley, chili pepper, season with salt and pepper again. Mix thoroughly, add breadcrumbs. Heat oven to 175 °C , place bean pastry in large greased oven baking tray, bake for aproximately 45 minutes. Serve with your favourite sauce or ketchup.

Whilst this does look deliscious, you might want to add an alternative for the eggs in the instructions, other wise it really isn't suitable for vegans! Nice recipe though =]
