Courgettes, you can prepare this vegetable in a million ways. In fact, it can be even eaten raw. In a large percentage it consists of water, so it  is ideal for people who want to lose weight. 100 grams of courgettes contain only 15-16 calories! This dish is perfect  for a light summer lunch.

For two tortillas:

  • 800g courgettes
  • 150g baby spinach
  • 10 eggs
  • 200g grated cheese (Gouda)
  • salt, pepper, oregano, parsley

We clean and wash the courgettes and cut into slices. Preheat oven to 200 ° C. Place slices of courgettes on the grill,  and grill in the oven for 20 minutes. Beat the eggs, add salt, pepper, oregano and chopped parsley, in the end mix with grated cheese. Rinse baby spinach. Two flat heat-resistant baking  forms  (20cm diameter) cover with baking paper and grease with  small amount of butter or olive oil. Arrange slices of courgettes and baby spinach leaves in forms (leave a few for decoration). Pour over eggs with cheese, place in the oven (200 ° C) and bake for  20 minutes. Decorate with a few slices of courgettes, baby spinach leaves, chopped parsley and freshly ground pepper.
