Vegetarian food does not have to be boring or colourless. Even though there is no meat - this dish is very filling - with courgettes, tomatoes and rich sauce topped with hard-boiled eggs. We used to make this recipe in my family home especially during summer. Best tastes with couscous.

For 3-4 portions:

  • 3 courgettes
  • 200g small cherry tomatoes
  • 4 eggs
  • 125g butter
  • 2 cups of milk
  • vegetable stock cube
  • 50g parmesan cheese
  • 2 tbs flour
  • couscous
  • salt and pepper,
  • parsley

Wash courgettes and cut into slices. Preheat oven to 175 °C and place them on the grill for about 10-12 minutes. Two minutes before the end of grilling add tomatoes. In the meantime place couscous in the pan and cover with boiling water, add salt, leave for few minutes. In a pan melt the butter, add flour, mix. Add milk, stock cube, mix all the ingredients well. Cook for 2-3 minutes until the mixture thickens, add finely chopped parsley. Boil eggs in hot water for approx. 6 minutes. Remove fill with cold water. On the plates place couscous, pour sauce on top and decorate with pieces of courgettes, tomatoes and eggs. Sprinkle with Parmesan cheese, chopped parsley and freshly ground pepper.
