My favourite cooking pan is  my cast iron, you can serve eggs on spinach, on this heavy skillet to impress the guests. The simplicity of this dish speaks for itself, it is great for quick lunch or late dinner. Some people like the yolk solid, while others including ourselves like it runny. Which ones do you prefer? The oregano and pine nuts really add beautiful flavour to the dish. When buying spinach make sure it is fresh, and leaves do not have visible discolouration. Then, wash them, dry and cut off the tails.

Ingredients for 2:

  • 125g fresh spinach
  • tbs butter
  • garlic clove
  • half lemon juice
  • 2 tbs olive oil
  • 2 large eggs
  • pine nuts
  • tsp oregano
  • salt, pepper, dill

Melt butter with oil in a large pan over medium heat. Fry garlic, than add dried spinach leaves, season with salt and pepper and oregano, cook turning often for around 3-4 minutes, at the end add lemon juice.

Transfer spinach mixture to skillet, in which you will be serving your dish. In the meantime on large pan prepare eggs. Crack eggs into a pan, season  with salt and pepper and cover with a lid. Bake on a low heat, until the whites are set and the yolks are still runny. Toast pine nuts on dry skillet over medium-low heat. Serve eggs on spinach decorated with dill and pine nuts. Serve immediately.
