An excellent idea when you have guests. Strength lies in its simplicity, and the biggest bonus is the minimum washing after. You can cook it in a casserole or stew one-pot dish.We used Chorizo, which is one of our favourite Spanish meats - traditional sausage made of pork, has a strong and distinctive smell. Perfectly goes with the chicken, and addition of wine makes the meat soft and juicy. We have chosen medium-dry Spanish wine, some of it you add to the dishes and the rest serve with a ready meal.
serves 4 :
- 4 chicken pieces (thighs)
- 1/2 large onion
- yellow pepper
- 3 garlic cloves
- 200 g chorizo
- 2 tbs tomato pure
- 150 ml white wine
- 450 ml chicken stock
- 250 g express rice (2min)
- 2 tbs chopped parsley
Heat the oil in a large saucepan and brown the chicken pieces on all sides. Remove from the dish and put to one side. Lower the heat and add chopped onion, sliced pepper, cook for few minutes. Than add pressed garlic, sliced chorizo and tomato puree, cook for 2-3 minutes. Place chicken back to the dish, add wine, stock, bring to the boil, lower the heat, cook for 30 minutes. Add rice and stir everything, cook for a while until rice absorbs most of the cooking liquid. Season to taste and serve with freshly grounded black pepper and chopped parsley.
