I bought recently new issue of Australian's Donna Hay's magazine and it is funny how you start reading autumn/winter articles in the middle of summer, surely they can cool you down. I still want to enjoy my summer, but we definitely need storm in Ireland cause it's way too humid in last few days in Dublin. We need storm and we need it now, and we know it will not come. It rains here all right, but we had maby two storms in last few years. Normally if we have such humidity in Poland there is a huge storm coming and after raining all night with thunders and lightning you wake up in the morning and you enjoy this really clear day, you breathe fresh air, light winds are blowing and everyone is relieved! And what summer do you have so far and how do you keep cool?
Since we can't count on the storm, we continue to look for ways to cool us down in the kitchen. When it's hot we don't feel like eating, we want something light, yet satisfying. Today's salad screams: Summer on a plate :) Why some salads are perfect for the summer and why some you would only eat during winter? For sure some ingredients we associate with summer, like prawns and watermelon and let's do not forget refreshing taste of freshly chopped coriander. Today's dish is low-cal, so enjoy everyone and stay cool:)
for 2 portions:
- 1/2 small red onion
- garlic clove
- small red chilli
- juice 1 lime
- tbs rice or white wine vinegar
- tsp honey
- watermelon wedge
- 2 avocado
- small bunch coriander leaves
- 200g cooked tiger prawns
- salt, pepper
Deseed and dice watermelon, peel and dice avocado too. Finely chop red onion, red chilli pepper and crush the garlic. Chop coriander leaves. Put the onion in a medium bowl with the garlic, chilli, lime juice, vinegar and honey and some seasoning. Leave the marinade for 10 minutes. Add the watermelon, avocado, coriander and prawns, then toss gently and serve.
