The salad's creation is generally attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States. This is first salad I tried when I arrived to Ireland. We prepared lighter version without bacon. You can buy the sauce or make it yourself from following ingredients: lemon juice, olive oil, egg, Worcestershire sauce, garlic, and black pepper. It may be prepared tableside.
For 2 portions:
- 3 chicken breast fillets
- 2 pita breads
- 2 baby cos lettuce, leaves separated, washed, dried
- 150ml Caesar salad dressing
- 100 g parmesan
- 100 g pine nuts
Heat a teflon pan over medium-high heat. Add the chicken and cook for 4-5 minutes each side or until cooked through. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest. Cook pita under grill for 2 minutes each side or until golden. Tear cos lettuce and place in a bowl, arrange the chicken and pita on top of the lettuce. Drizzle with the Caesar salad dressing and sprinkle with parmesan and roasted pine nuts. Serve immediately.
